Ingredients

  • ¼ watermelon, cubed

  • 1 cup feta cheese, cubed (or crumbled if preferred)

  • 1 cucumber, peeled and diced

  • ½ cup blueberries

  • ¼ cup chopped fresh basil

  • 1 tbsp olive oil

  • 1 tbsp balsamic reduction

  • 1 tsp salt (start with less and adjust to taste)

Directions

  • In a large bowl, combine watermelon, feta, cucumber, blueberries, and chopped basil.
  • Drizzle with olive oil and balsamic reduction.
  • Sprinkle with salt (start with ½ tsp and adjust).
  • Gently toss everything together until well combined.
  • Serve immediately, or chill for 15 minutes for an even cooler bite.
