Ingredients

  • 6 boneless, skinless chicken thighs

  • 2 cups buttermilk

  • 1 ½ cups all-purpose flour

  • 2 tbsp paprika

  • 1 tbsp red pepper flakes

  • Salt & pepper to taste

  • Oil for frying

  • 1 cup buffalo sauce

  • ½ cup honey

  • 2 tbsp butter

  • Slider buns

  • 2 tbsp melted butter

  • 1 tbsp chopped parsley

  • Buffalo ranch for dipping

Directions

  • Marinate the Chicken: Soak chicken thighs in buttermilk for at least 30 minutes (or overnight for best flavor).
  • Prepare Dredge: In a bowl, mix flour, paprika, red pepper flakes, salt, and pepper.
  • Heat Oil: Heat oil in a deep skillet or fryer to 350°F (175°C).
  • Dredge & Fry: Remove chicken from buttermilk, dredge thoroughly in seasoned flour, and fry for 5–6 minutes per side until golden brown and cooked through. Drain on paper towels.
  • Make Sauce: In a small saucepan over low heat, melt butter, then stir in buffalo sauce and honey. Toss the fried chicken in the sauce until well coated.
  • Toast Buns: Brush slider buns with melted butter and sprinkle with parsley. Toast lightly if desired.
