10 boneless, skinless chicken thighs, cut into chunks
1/2 cup Greek yogurt
1 tbsp curry powder
1 tbsp garam masala
1 tsp paprika
1/2 tsp black pepper
FOR THE SAUCE:
1 tbsp oil (vegetable or avocado)
1 tbsp garam masala
1 white onion, chopped
1 tbsp curry powder
3 tbsp tomato paste
1/2 cups heavy cream
2 tbsp butter
Salt to taste
Directions
- Marinate the Chicken: In a large bowl, mix Greek yogurt, curry powder, garam masala, paprika, and black pepper. Add chicken and toss to coat. Let marinate at least 30 minutes (or longer if you can).
- Cook the Chicken: In a large pan over medium heat, add oil and cook marinated chicken until browned and cooked through. Remove and set aside.
- Make the Sauce: In the same pan, sauté chopped onion until soft and translucent, about 5 minutes. Add tomato paste and cook for 1 minute.
- Creamy Simmer: Pour in heavy cream and add butter, stirring until smooth. Return chicken to the pan and let simmer 10–15 minutes until thick and rich. Season with salt to taste.
