For the Smash Patties:
1 lb ground beef (80/20 blend works best)
Salt and pepper, to taste
4 slices American cheese
For the Caramelized Onions:
1 large onion, thinly sliced
1 tbsp beef dripping or butter
Pinch of salt
For the Dirty Mayo:
1/2 cup mayonnaise
1 tbsp sriracha
2 tbsp chopped dill pickles
1 tsp Dijon or yellow mustard
1 clove garlic, minced
1 tsp Worcestershire sauce
For Assembly:
2 burger buns, toasted
4 slices crispy bacon

Directions
- Caramelize the Onions
- In a skillet over medium-low heat, melt beef dripping or butter. Add sliced onions and a pinch of salt. Cook slowly, stirring occasionally, until deep golden brown and sweet—about 10–15 minutes. Set aside.
- Make the Dirty Mayo
- In a small bowl, mix together mayo, Dijon mustard, smoked paprika, and hot sauce. Season to taste with salt and pepper. Chill until ready to use.
- Form the Patties
- Divide ground beef into 4 equal balls (about 4 oz each). Don’t pack too tightly. Season lightly with salt and pepper.
- Smash the Patties
- Preheat a cast iron skillet or griddle over high heat. Once hot, add beef balls and immediately smash them flat using a burger press or heavy spatula. Cook 1–2 minutes until the edges are crispy.
- Flip & Cheese
- Flip patties and immediately top each with a slice of American cheese. Cook another 1–2 minutes until the cheese melts and patties are cooked through.
- Toast the Buns
- While the patties cook, lightly butter the buns and toast them cut side down in a separate pan or on the griddle until golden.
- Assemble the Burgers
- Spread Dirty Mayo on both sides of the toasted buns. Layer one cheesy patty, some caramelized onions, a slice or two of crispy bacon, and the second patty. Top with pickles if desired, then the bun lid.
Notes
- Use a metal spatula with a firm press to really smash those patties—crisp edges are the key!
Don’t overcrowd the pan—work in batches if needed to keep the heat high.
Dirty Mayo can be made in advance and stored for up to a week in the fridge.
