1 full loaf French bread
2 large boneless, skinless chicken breasts
Salt & pepper to taste
1 cup flour
2 eggs, beaten
1 ½ cups breadcrumbs (panko or Italian style)
Vegetable oil (for frying)
1 ball fresh mozzarella, sliced
2–3 ripe tomatoes, sliced
1 handful fresh basil leaves
¼ cup balsamic vinegar reduction
Directions
- Slice the chicken breasts in half horizontally and pound to even thickness if needed.
- Season chicken with salt and pepper.
- Dredge each piece in flour, dip in beaten egg, then coat with breadcrumbs.
- Heat oil in a large skillet over medium heat. Fry chicken until golden brown and fully cooked (about 4–5 minutes per side). Drain on paper towels.
- Slice the French bread loaf in half lengthwise.
- Layer the bottom half with sliced mozzarella, followed by the crispy chicken, tomato slices, and basil leaves.
