Ingredients

  • 4 salmon fillets (skin-on or skinless)

  • Salt & pepper, to taste

  • 1 tbsp olive oil

  • 3 cloves garlic, minced

  • 1 cup heavy cream

  • 1/3 cup sun-dried tomatoes in oil, drained and chopped

  • 1/4 cup grated Parmesan cheese

  • 1/2 tsp dried Italian seasoning

  • Optional: 1/4 tsp crushed red pepper flakes

  • Juice of 1/2 lemon

Directions

  • Season salmon fillets with salt and pepper.
  • Heat olive oil in a large skillet over medium heat. Sear salmon for 4–5 minutes per side until golden and cooked through. Remove and set aside.
  • In the same skillet, sauté garlic for 30 seconds.
  • Add sun-dried tomatoes, then stir in cream. Bring to a gentle simmer.
  • Stir in Parmesan, Italian seasoning, and red pepper flakes (if using). Simmer 2–3 minutes to thicken slightly.
  • Return salmon to the pan and spoon sauce over fillets. Simmer 2–3 more minutes.
  • Finish with lemon juice and serve warm.
