1 lb lean ground beef
1 tsp seasoning salt
1 white onion, diced
1 cup shredded cheddar cheese
4 to 5 dill pickles, chopped
¼ red onion, chopped
2 tomatoes, chopped
3 to 4 medium russet potatoes
Olive oil and salt, for coating
¼ cup mayonnaise
2 tbsp ketchup
2 tbsp mustard
1 tsp pickle juice
Directions
- Preheat oven to 425 °F (220 °C).
- Toss potatoes in a little olive oil and salt, place on a baking sheet, and bake until golden and tender (about 30 minutes).
- Meanwhile, heat a skillet over medium-high heat and add the ground beef, seasoning salt, and diced white onion. Cook until beef is browned and onion is soft, breaking meat into crumb-size pieces (about 8 to 10 minutes).
- Stir in shredded cheddar cheese until melted.
- Whisk together the mayonnaise, ketchup, mustard, and pickle juice.
- To assemble, divide baked potato bases into four bowls. Top each with cheesy beef mixture, chopped dill pickles, red onion, and tomato.
