  • 1 lb nugget (baby) potatoes, quartered

  • 2 tbsp olive oil, divided

  • 1 tsp garlic salt

  • ½ tsp black pepper

  • ½ onion, finely diced

  • 2 garlic cloves, minced

  • 1 tomato, finely diced

  • ½ red bell pepper, finely diced

  • 1 steak (sirloin or striploin works best), thinly sliced

  • 1 tbsp Cajun seasoning

  • 1 tbsp tomato paste

  • ¼ cup water (for deglazing)

  • 1 cup shredded mozzarella cheese

  • 2 tbsp crispy onions (store-bought)

  • Fresh parsley, chopped (for garnish)

Directions

  • Preheat oven to 425°F (220°C).
  • Toss quartered potatoes with 1 tbsp olive oil, garlic salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes, flipping halfway through, until golden and crispy.
  • While the potatoes bake, heat the remaining olive oil in a skillet. Add onion, garlic, tomato, and red pepper. Cook until softened and fragrant.
  • Add sliced steak and Cajun seasoning. Cook until browned. Stir in tomato paste and a splash of water to deglaze the pan, scraping up all those flavor bits. Simmer until thickened and saucy.
  • Once potatoes are done, spoon the steak mixture over top. Sprinkle with mozzarella and let it melt (you can pop it back in the oven for a minute if you want it extra gooey).
  • Finish with fresh parsley and crispy onions. Serve hot and enjoy!
