Ingredients

  • 5-6 medium russet potatoes

  • 1 tbsp oil

  • 3 boneless skinless chicken breasts

  • 1 cup franks red hot buffalo sauce

  • 1/4 cup ranch

  • 1 tbsp skim milk

  • Green onion

Directions

  • Preheat your oven to 425°F (220°C).
  • Wash and dice 5–6 medium russet potatoes into bite-sized chunks.
  • Toss the potatoes with 1 tablespoon of oil and season with salt and pepper (optional).
  • Spread the potatoes in a single layer on a baking sheet.
  • Roast in the oven for 30–35 minutes, flipping halfway through, until golden and crispy.
  • While potatoes are roasting, season and cook 3 boneless skinless chicken breasts (grilled, baked, or pan-seared) until fully cooked (internal temp: 165°F/74°C).
  • Shred or chop the cooked chicken into small pieces.
  • In a bowl, mix the shredded chicken with 1 cup of Frank’s RedHot Buffalo Sauce until well coated.
  • In a small bowl, whisk together 1/4 cup ranch dressing with 1 tablespoon of skim milk to thin it out slightly (optional).
  • When potatoes are done, transfer them to a large serving dish or platter.
  • Top with the buffalo chicken mixture.
  • Drizzle the thinned ranch over the top.
  • Finish with chopped green onions as garnish.
  • Serve hot and enjoy!
