5-6 medium russet potatoes
1 tbsp oil
3 boneless skinless chicken breasts
1 cup franks red hot buffalo sauce
1/4 cup ranch
1 tbsp skim milk

Directions
- Preheat your oven to 425°F (220°C).
- Wash and dice 5–6 medium russet potatoes into bite-sized chunks.
- Toss the potatoes with 1 tablespoon of oil and season with salt and pepper (optional).
- Spread the potatoes in a single layer on a baking sheet.
- Roast in the oven for 30–35 minutes, flipping halfway through, until golden and crispy.
- While potatoes are roasting, season and cook 3 boneless skinless chicken breasts (grilled, baked, or pan-seared) until fully cooked (internal temp: 165°F/74°C).
- Shred or chop the cooked chicken into small pieces.
- In a bowl, mix the shredded chicken with 1 cup of Frank’s RedHot Buffalo Sauce until well coated.
- In a small bowl, whisk together 1/4 cup ranch dressing with 1 tablespoon of skim milk to thin it out slightly (optional).
- When potatoes are done, transfer them to a large serving dish or platter.
- Top with the buffalo chicken mixture.
- Drizzle the thinned ranch over the top.
- Finish with chopped green onions as garnish.
