Ingredients

  • 1 head of cauliflower, cut into bite-sized florets

  • 1 cup all-purpose flour

  • 1 cup buttermilk

  • 1 tsp paprika

  • Salt & pepper, to taste

  • 1/2 cup buffalo sauce (for batter)

  • 1/2 cup additional buffalo sauce (for tossing)

Directions

  • Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • In a bowl, mix flour, paprika, salt, pepper, buttermilk, and 1/2 cup buffalo sauce until smooth.
  • Toss cauliflower florets in the batter to coat evenly, then place on the baking sheet in a single layer.
  • Bake for 30 minutes, flipping halfway through.
  • Remove from oven and toss cauliflower in remaining buffalo sauce.
  • Return to oven for another 15 minutes until crispy and caramelized.
  • Serve hot with ranch or blue cheese dip!
