4 boneless skinless chicken breasts
1 cup mayonnaise
1/4 cup sriracha
1/4 cup sweet chili sauce
2 tbsp paprika
1 tbsp minced garlic
1 tsp soy sauce
Juice of 1 lime
Skewers (metal or soaked wooden)
Directions
- Cut the chicken breasts into even-sized cubes, about 1.5 inches each, for skewering.
- In a large mixing bowl, whisk together the mayonnaise, sriracha, sweet chili sauce, paprika, minced garlic, soy sauce, and lime juice until smooth.
- Add the chicken pieces to the marinade and stir until all pieces are well coated.
- Cover and refrigerate for at least 1 hour (up to overnight for more flavor).
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- Thread the marinated chicken pieces onto the skewers, packing them fairly tightly.
- Preheat your grill (or grill pan) to medium-high heat.
- Grill the skewers for about 12–15 minutes, turning occasionally, until the chicken is nicely charred on the edges and fully cooked (internal temp of 165°F or 74°C).
- Let rest for a few minutes, then serve hot with extra lime wedges, a salad, or rice.
