Ingredients

  • 3–4 medium potatoes, diced into tiny chunks

  • 1–2 tbsp olive oil

  • Salt & pepper

  • For the Marry Me Chicken:

  • 1 medium onion, thinly sliced

  • 2 chicken breasts, sliced into bite-sized pieces

  • 1 can sun-dried tomatoes (with oil)

  • 1 tbsp tomato paste

  • 1 cup heavy cream

  • ½–1 cup grated parmesan cheese

  • Salt & pepper

  • Optional: red pepper flakes, garlic powder, Italian seasoning

Directions

  • Make the crispy potatoes: Preheat your oven to 425°F (220°C).
  • Toss the tiny potato cubes with olive oil, salt, and pepper.
  • Spread them out on a baking sheet and roast for 25–35 minutes, stirring halfway, until golden and crispy.
  • Once done, scoop them into bowls so they’re ready for topping.
  • Make the Marry Me Chicken: Heat a large skillet over medium heat with a little of the oil from the sun-dried tomatoes.
  • Add the sliced onions and cook until softened and lightly golden.
  • Add the chicken and season with salt & pepper. Cook until the chicken is no longer pink.
  • Stir in the tomato paste and let it toast for a minute.
  • Add the sun-dried tomatoes (chop them smaller if you prefer), including a little of the oil for flavour.
  • Pour in the heavy cream and stir to combine.
  • Add the parmesan and let everything simmer for 3–5 minutes, until the sauce thickens and becomes silky.
  • Taste and adjust seasoning — more salt, pepper, chili flakes, or parmesan as needed.
  • Assemble
