Grilled to perfection and slathered in that creamy, kicky sauce everyone pretends they “don’t need the recipe for.” Spoiler: they do.

Ingredients

  • 4 boneless skinless chicken breasts

  • 1 cup mayonnaise

  • 1/4 cup sriracha

  • 1/4 cup sweet chili sauce

  • 2 tbsp paprika

  • 1 tbsp minced garlic

  • 1 tsp soy sauce

  • Juice of 1 lime

  • Skewers (metal or soaked wooden)

Directions

  • Cut the chicken breasts into even-sized cubes, about 1.5 inches each, for skewering.
  • In a large mixing bowl, whisk together the mayonnaise, sriracha, sweet chili sauce, paprika, minced garlic, soy sauce, and lime juice until smooth.
  • Add the chicken pieces to the marinade and stir until all pieces are well coated.
  • Cover and refrigerate for at least 1 hour (up to overnight for more flavor).
  • If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  • Thread the marinated chicken pieces onto the skewers, packing them fairly tightly.
  • Preheat your grill (or grill pan) to medium-high heat.
  • Grill the skewers for about 12–15 minutes, turning occasionally, until the chicken is nicely charred on the edges and fully cooked (internal temp of 165°F or 74°C).
  • Let rest for a few minutes, then serve hot with extra lime wedges, a salad, or rice.
