Ingredients

  • 4 cups cheese-stuffed ravioli (fresh or frozen)

  • 3 tbsp butter

  • 1 tbsp olive oil

  • 1 small onion, finely diced

  • 2 tbsp garlic, chopped

  • 1 tsp red pepper flakes (adjust to taste)

  • 1/3 cup tomato paste

  • 2 shots vodka (~3 oz total)

  • 1 1/2 cups heavy cream

  • 1 ball burrata

  • Freshly grated parmesan, for serving

  • Salt and pepper to taste

Directions

  • Bring a large pot of salted water to a boil and cook ravioli according to package instructions. Reserve 1/2 cup of pasta water before draining.
  • Meanwhile, heat butter and olive oil in a large skillet over medium heat. Add diced onion and sauté until soft and translucent, about 5 minutes.
  • Stir in garlic and red pepper flakes, cooking for 1–2 minutes until fragrant.
  • Add tomato paste and stir for 2–3 minutes until it deepens in color and caramelizes slightly.
  • Pour in vodka and simmer for 1–2 minutes, letting the alcohol cook off.
  • Reduce heat and stir in heavy cream. Let sauce simmer gently for 5 minutes, until thickened. Season with salt and pepper to taste.
  • Add drained ravioli to the skillet and toss to coat in sauce. Use reserved pasta water to thin the sauce if needed.
  • Plate and top each serving with torn burrata, parmesan, and a sprinkle of extra chili flakes if desired.
  • Serve immediately.
