1 cucumber, diced
1 red bell pepper, diced
1 shallot, finely chopped
½ cup fresh cilantro, chopped
3 ears of corn, grilled and kernels removed
½ cup feta cheese, crumbled
Juice of ½ lemon
Juice of 1 lime
½ tsp ground cumin (or to taste)
Salt & black pepper, to taste
1–2 tbsp olive oil
Directions
- Grill corn on the cob until slightly charred, then let cool and slice off the kernels.
- In a large bowl, combine cucumber, red pepper, shallot, cilantro, grilled corn, and feta.
- In a small bowl, whisk together lemon juice, lime juice, cumin, olive oil, salt, and pepper.
