Ingredients

  • 1 cucumber, diced

  • 1 red bell pepper, diced

  • 1 shallot, finely chopped

  • ½ cup fresh cilantro, chopped

  • 3 ears of corn, grilled and kernels removed

  • ½ cup feta cheese, crumbled

  • Juice of ½ lemon

  • Juice of 1 lime

  • ½ tsp ground cumin (or to taste)

  • Salt & black pepper, to taste

  • 1–2 tbsp olive oil

Directions

  • Grill corn on the cob until slightly charred, then let cool and slice off the kernels.
  • In a large bowl, combine cucumber, red pepper, shallot, cilantro, grilled corn, and feta.
  • In a small bowl, whisk together lemon juice, lime juice, cumin, olive oil, salt, and pepper.
  • Pour dressing over the salad and toss to coat evenly.
  • Chill or serve immediately for a bright, crisp bite.
