Ingredients

  • 1 full loaf French bread

  • 2 large boneless, skinless chicken breasts

  • Salt & pepper to taste

  • 1 cup flour

  • 2 eggs, beaten

  • 1 ½ cups breadcrumbs (panko or Italian style)

  • Vegetable oil (for frying)

  • 1 ball fresh mozzarella, sliced

  • 2–3 ripe tomatoes, sliced

  • 1 handful fresh basil leaves

  • ¼ cup balsamic vinegar reduction

Directions

  • Slice the chicken breasts in half horizontally and pound to even thickness if needed.
  • Season chicken with salt and pepper.
  • Dredge each piece in flour, dip in beaten egg, then coat with breadcrumbs.
  • Heat oil in a large skillet over medium heat. Fry chicken until golden brown and fully cooked (about 4–5 minutes per side). Drain on paper towels.
  • Slice the French bread loaf in half lengthwise.
  • Layer the bottom half with sliced mozzarella, followed by the crispy chicken, tomato slices, and basil leaves.
  • Drizzle generously with balsamic reduction.
  • Place the top half of the bread on and press gently.
  • Slice into portions and serve immediately.
