Ingredients

  • 1 head living lettuce, chopped

  • 2 cups cherry tomatoes, halved

  • 1 (15 oz) can corn, drained

  • 1 (15 oz) can black beans, drained and rinsed

  • 1 rotisserie chicken, shredded (approx. 3 cups)

  • For the Dressing:

  • 2 cups cottage cheese (low-fat recommended)

  • 3 tbsp ranch seasoning

  • 2 tbsp BBQ sauce

  • For the Crispy Rice:

  • 2 cups cooked rice (day-old preferred)

  • 3 tbsp sesame oil

Directions

  • Preheat oven to 400°F (200°C). Toss cooked rice with sesame oil and spread onto a baking sheet in a thin layer. Bake for 35–40 minutes, flipping halfway, until golden and crispy.
  • In a blender or food processor, blend cottage cheese, ranch seasoning, and BBQ sauce until smooth and creamy. Chill until ready to use.
